Having been to both Vietnam and France many times, I have found that the flavors at Le Colonial to be similar to what can be found in these destinations. The concept at Le Colonial, however, is totally designed for American tastes. The entire place(s) is the invention of American corporate types, with a polished and upscale iteration of Vietnamese cuisine. The food at American Vietnamese restaurants run by Vietnamese people is actually more authentic (and more tasty) than the attempt made at Le Colonial. When traveling, I try to completely avoid American corporate influence, and, as a result, have discovered higher quality and better tasting food across the board - particularly in France. Kudos for the atmosphere and service. We got our food to the table in about five minutes, which seems unnatural for a quality gourmet restaurant.
