Lighthouse Park
It's always fun to walk around Roosevelt Island when the weather is nice. The views over to Manhattan and Queens are great, and the Lighthouse Park has some cool art installations to explore in addition to the lighthouse itself.
The island has some great restaurants and coffee places, and so you can make a day or half day of it when exploring.

Newport Sand Beach
This was an unexpected gem on my visit to Liberty State Park. This "beach" is located between Newport and Hoboken PATH stations, and offers great views of downtown and midtown Manhattan.
I was visiting for the Newport Liberty Half Marathon, and so with an 8:30am race start time I got to watch the sun rise from here, which wa great.
This synthetic beach is quite small, and so I'm assuming it gets busy quickly on summer days, but it was a great place to lounge on a deck chair and soak up the autumn sun after the race.

Guildford Golf Club
A very well maintained course with excellent views over Guildford, the surrounding countryside, and the Cathedral. This is open land and so beware of the walkers when teeing off!
