Oyster Oyster,

Thank you for reviving my faith in DC food scene by showing everyone that it doesn’t just consist of lame food trucks and awful fusion cuisines. Every single dish was amazing from top-down and perfectly curated.

The asparagus course and the mushroom ragu were absolute show stoppers in a way that elevated the vegetables that I already loved so very much. Oh and the starter snacks and that marvelous broccoli bread pairs with the sunflower seed butter was just beyond.

If I had a vegetarian meal like this every day, I’d happily go vegetarian full time. Thank you for an amazing meal

You know, they always tell me DC has AMAZING food and I was inclined to believe it for whatever reason—it’s the capital; Top chef; tips from online patrons. I can go on about how that’s not true and my guess as to why BUT I thought a meal at a Michelin star place would dispel all of that.

And yet, the meal here was just so very OK. We got the tasting menu and the theme was basically celebration of spring. They really brought forth a lot of bitter, grassy (emphasis on grassy—that asparagus dish that reminded me a bit of both walking through the forest and baby food) and strange pickled notes across the entire meal that’s not entirely appetizing or able to whet the palate. The sub-theme was also throw a piece of mint on anything and everything #spring #fresh #toothpaste

There was at least one high: the grilled soft-shell crab with that crab butter sauce was *transcendent* and was the only dish worthy of the Michelin star; I think they did this area proud with that small one. I’d also highlight the mid-Atlantic inspired rhubarb cake, a very good end to the meal. However, we never arrive anywhere close to that high ever again for the rest of the meal.

The main course for the tasting menu was entirely pork. If I had known that prior to the meal, I would’ve immediately canceled the reservation that I made a few months ago. Now, I don’t eat pork so…there goes the loin to my partner. Then there was an array of dishes that utilized other parts of the pig (basically just the fat and some of the meats) And yeah it was playful and whatnot but all the parts of that course was just very OK that was just very heavy and fatty without being—sorry to use the ‘t’ word again—transcendent. I’ve had all these flavors before and combine that with my supreme distaste for pork, it was a subpar main course and I felt like I kinda wasted my money. Please note that ricotta and ginger do not make a good flavor combo.

Idk…sorry to sound so harsh cuz I was looking forward to this meal this entire trip, and don’t get me wrong, it was a fine meal. However, if this is some of the best food that DC has to offer, then it doesn’t look like DC has much to offer at all.
We were pleasantly surprised by this place! We came here in a hungry drunken stupor after a bout of really tasty beers at a brewery, and the meal was just perfect.

The menu was varied and tasty, with nice sized portions, with the albondigas and flank steak being highlights. Certainly, this was the best of the tapas places that we’ve been to in Denver.

Regrettably I didn’t get a chance to try their paella so there’s another reason to go back!
